i hope you all had a good weekend.
this one was great for me, personally. i spent the entire weekend surrounded by some of my favorite people, saw two great shows (lemon twigs + a bruce springsteen cover band), and got to dance to frank ocean's pyramids (extremely rare club song.) i'm a lucky son of a bitch, that's for sure.
so this recipe calls for a lot of ingredients in a small amount, but i do think it is worth it to source them - your kitchen will be all the better for it. if you have a hard time finding the coconut manna, it is also called coconut butter. i use it in place of coconut milk in a lot of recipes, as it has a deeper coconut flavor and i don't have to waste a whole can of coconut milk.
serve this beef with carrot noodles [i will post my recipe soon] if you're trying to live the low carb lifestyle, or white rice if you're not.
habanero coconut stir fry
1 tbsp neutral flavored oil
1 small habanero, thinly sliced, not seeded
1 large shallot, thinly sliced
1 cup sliced button mushrooms
1 tbsp soy sauce
1lb ground beef [90/10]
3 cloves of garlic, finely chopped
1 tsp sesame oil
1 tsp ginger oil
1 tbsp mirin
3 tsp fish sauce
2 tbsp coconut manna
cilantro, cashews to garnish
- heat the oil in a large skillet until shimmering. add habanero and shallot to the oil, stirring frequently to avoid burning [2-3 minutes]
- add the mushrooms and soy sauce to the pepper and shallot mixture and sauté until mushrooms are browned [4-8 minutes]
- after mushrooms are nicely browned, add the beef, garlic, oils, mirin, and fish sauce to the pan and sauté until beef is thoroughly browned. stir in the coconut manna until incorporated.
- serve on carrot noodles/rice/zucchini noodle - top with cilantro and cashews and maybe a lime wedge if you're feeling nasty.
