I never think that my weekends are long enough. This one went especially fast for me.

Friday: made myself a snack plate and accidentally drank the better half of a bottle of Nobilo. I ended up getting pretty weepy over Once Upon A Time because I’m an adult.

Saturday: my cousin came over and we went and got a couple drinks in my neighborhood. Then, I volunteered at The Children’s Theatre’s Backstage Bash. My friend Caitlin worked/planned the event so I wanted to help out. Seeing the Minnneapolis elite in their gala finest was such a treat.

Sunday: FINALLY set up the free cable I get with my apartment rent. I watched the Packer game and kind of pouted but I’ll get over it.

Then, I made this!

So, actually these can be burgers OR tiny meatballs, your choice. However, I chose the burger title because who wants to read a recipe for Mexican Meat?

These are chockablock full of lime, cilantro, garlic, and red onion. I especially enjoy them on arugula (surprise, surprise) with thinly sliced radishes.

Mexican Burgers
1lb ground beef
1/2lb ground pork
1/2 red onion, thinly diced
1 cup cilantro, chopped
2 cloves of garlic, chopped
1 tbs salt
1 tsp pepper
Juice of one lime

In a mixing bowl, combine all ingredients until mixed. That’s really it.

Methods:

Shape into patties and cook as a burger!

Roll into balls and bake them at 350 for 20 minutes. Then you’ve got meatballs

Use it in place of ground beef. I actually do this a lot. Sauté the meat, then add 1/2 a sweet potato and an egg. I love this on arugula for a breakfast salad. Great way to get quick protein!
